Three Plantain Cups Recipes You Should Try

If these is one food Nigerians cherish most of all, it has to be plantain. A lot of debate has arisen on Twitter about which plantain is the best to eat: over ripe fried plantain, or ripe fried plantain.

Unfortunately, we at SMA find the argument very limiting as plantain is such a versatile food that can be creatively used in different ways. It can be boiled, pounded to make plantain pudding, or some form of plantain moi moi (my grandma actually made this for me once). It can also be used to make pancake. But the recipe we are focusing on today is its usefulness in making stuffed plantain cups.

What are stuffed plantain cups you ask? well, these bite sized beauties are basically cups made out of plantain. and then…you know…stuffed. The name honestly speaks for itself. The plantain cups can be stuffed with anything you want.

Shrimps/seafood, like the one above, or shredded/cooked beef like the one below.
